Elderberry (Sambucus nigra)

Elder is one of those plants that seems to exist at the very heart of the Western herbal tradition — so deeply woven into the folk medicine, food culture, and mythology of Europe that it is difficult to imagine the hedgerows and forest edges of the old world without it. A perennial shrub of remarkable generosity, elder offers its flowers in the warmth of early summer and its deep purple-black berries in the abundance of autumn, and both have been gathered, prepared, and celebrated for as long as people have known how to look for them.

Native across most of Europe, North America, and southwest Asia, elder grows in the liminal places it seems to favor — along hedgerows, at the edges of forests, in cottage gardens and wild margins where cultivated and untamed land meet. In those spaces it has accumulated a folklore as rich and layered as any plant in the Western tradition. Elder trees were believed in many European cultures to be inhabited by a protective spirit — the Elder Mother — and it was considered wise to ask her permission before harvesting any part of the plant. To cut an elder without acknowledgment was thought to invite misfortune. To plant one near the home, however, was to invite protection.

The berries have fed and healed people across centuries in equal measure. In the kitchen they have been pressed into wines, cordials, preserves, and syrups — the deep, complex flavor of elderberry lending both color and character to whatever it joins. In the apothecary they have been prepared as tinctures, teas, and the beloved elderberry syrup that remains one of the most recognized and trusted preparations in the Western herbal tradition, often combined with propolis or echinacea for additional immune support. The dried berries are notably less bitter than fresh, making them more pleasant and versatile to work with.

It is worth noting that elder is a plant that asks to be prepared with care. While the flowers are gentle and widely enjoyed, the raw berries contain sambunigrin, a naturally occurring compound that can cause nausea and digestive upset if consumed without proper processing. Cooked, dried, or otherwise prepared, the berries are transformed into the safe and beloved ingredient that generations of herbalists have relied upon. The branches and leaves of the plant are not used medicinally.

Elderberries are most commonly prepared as syrups, tinctures, teas, wines, and cordials — a range of preparations as long and as varied as the history of the plant itself.
